Either love it or no thanks: is there a neutral opinion concerning broccoli? We definitely love broccoli! In Turkey, the vegetable is particularly popular in winter. There are a few classics that are popular among Turkish broccoli recipes. These include broccoli salad, broccoli with yogurt, broccoli gratin (a favorite with cauliflower!), broccoli köfte, broccoli soup and the Turkish recipe we are presenting to you today: Brokoli Yemegi.

 

What is broccoli yemegi?

We already know it from chickpeas, zucchinis or leeks - in Turkish, dishes are simply called "main ingredient food". Brokoli is the broccoli (did you know that?), yemek is the food. Brokoli Yemegi is therefore a broccoli dish. 

 

Our Turkish broccoli recipe uses the typical Turkish ingredients for each dish. This is what goes into brokoli yemegi:

  • good oil/fat
  • Onion and garlic
  • Potatoes and carrots
  • Salca* (tomato and/or bell pepper paste)
  • salt and pepper 

This doesn't sound like a lot, but the secret of delicious Turkish home cooking really lies in its simplicity. Sometimes we have tried to spice up classic Turkish dishes and every time the simple original was better. But in Turkish cuisine, the choice of ingredients is all the more important.

 

In this broccoli recipe, for example, this would be particularly good salca* or good oil/fat, such as high-quality olive oil* or good butter. These two important components of Turkish home cooking are a must for the taste experience. 

 

Regardless of this, you can prepare our Turkish broccoli recipe quickly and easily with just a few ingredients. Incidentally, the broccoli recipe is vegetarian and vegan.

 

What goes well with broccoli yemegi?

This Turkish broccoli recipe goes particularly well with (garlic) yogurt, ayran, bread or even rice and bulgur. We served it with rice with chickpeas and ayran, for example. As always, jalapenos were a must. Of course, you can also enjoy the broccoli recipe on its own. Afiyet olsun!

 

Brokoli Yemegi: Turkish broccoli recipe

Ingredients (approx. 4 portions)

  • 1 whole broccoli
  • 1 large carrot
  • 2 medium potatoes
  • 1 onion
  • 3 garlic cloves
  • 5 tbsp olive oil
  • 1 tbsp tomato puree
  • 1/2 tbsp paprika paste (we used hot paprika)
  • optional pul biber (turkish chili flakes)
  • 1 tsp sugar
  • salt and pepper
  • water

 

 

Preparation

 

Step 1: Chop the onion and fry it in a pan in the oil until translucent. We always let them brown a little.

Step 2: Cut the broccoli into individual florets and wash them. Peel the carrots and cut them into slices. Peel the potato and dice it.

Step 3: Add the carrots and potatoes to the onions. Sauté everything a little.

Step 4: Now add the tomato and bell pepper purée to the pan. Mix them well into the vegetables so that everything is red and no lumps are visible. Press the garlic into the pot.

Step 5: Now add the broccoli to the pot. Season everything (salt, pepper, sugar, Pul Biber) and add water to the pot until the broccoli is about half covered. You can see how much water this should be in the picture above.

Step 6: When everything is boiling, turn the heat to medium and cook the broccoli recipe for around 20 minutes with the lid on. When the potatoes and carrots are soft, the meal is ready.

 

 

Tip: If you leave the broccoli recipe to stand for a while with the lid on, it will taste even better.
